Curried Kale & Cauliflower Shepherd’s Pie

In honor of the third season of Downton Abbey beginning, I decided to throw in some British inspired fare this weekend.  Even though I scored an Isobel Crawley in the Which Downton Abbey Job is Right for You? Quiz, I am a fan of the downstairs crew, so I started with a dish that wouldContinue reading “Curried Kale & Cauliflower Shepherd’s Pie”

Chick’n Stir Fry + Easy DIY Holiday Linens

Who doesn’t love all the pretty holiday decor out in the stores right now and all over the web?  I love prints and holiday sparkle as much as the next gal, but I hate buying these things knowing I could very well make them.  I know, I know, here comes that curse again.  I hadContinue reading “Chick’n Stir Fry + Easy DIY Holiday Linens”

Cranberry Ginger Relish

What have you done so far today?  I was up at 6 AM making apple pie (my best one yet!) and this yummy cranberry relish.  Today is the perfect time to make your Thanksgiving day cranberry sauce.  This is one I have been making since 2007.  It has the perfect zing with the addition ofContinue reading “Cranberry Ginger Relish”

Roasted Carrot Ginger Soup

Here is another option for a Thanksgiving side.  Soup is a fantastic way to feed a large crowd, especially as a starter or a side.  This can be made a day or two in advance and refrigerated or even frozen a week or more in advance.  Simply put in the slow cooker on warm.  BeContinue reading “Roasted Carrot Ginger Soup”

Balsamic Acorn Squash

Garlic Rosemary Potatoes

These beautiful autumn days make me want to bake and cook the comfort foods.  One combination our household can never get enough of is garlic + rosemary + potatoes.   With the long growing season in North Carolina I am still harvesting green beans (okra, tomatoes, and peppers, too), so this dish was half homeContinue reading “Garlic Rosemary Potatoes”

Roasted Pumpkin Pizza

Holy pumpkin pizza!  I made this roasted pumpkin pizza/flat bread creation earlier this week and am wishing I still had the leftovers.   Start with 1 pumpkin pie pumpkin.   Slice off the top, cut in half, and remove seeds.  Cut into 2-inch chunks.   Spread onto 1-2 rimmed baking sheet(s).  Season with olive oil,Continue reading “Roasted Pumpkin Pizza”

Curried Butternut Squash Soup

We have been loving the slow cooker at our house lately – it may run out of power at the rate we are using it.  This next soup recipe is so good it will have you slurping it down like this.  Eric told me several times that this was a good soup, which for aContinue reading “Curried Butternut Squash Soup”
