Mommy’s Musings: Brinner & Spring

 There is just something about brinner that makes me so happy.  It’s like I am getting away with eating cake and ice cream for dinner, which I am NOT hesitant to do, assuming Greta is in bed.

 This family goes through eggs and bread like its our job.  Tonight I mixed things up a bit and threw in sweet potato pancakes from the Old Mill of Guilford plus baked potatoes filled with egg.  I have been meaning to try this forever after seeing it on another blog, Our Best Bites.

I changed mine up a bit and kept it far simpler.  I sliced my potatoes in half, baked them til soft, and then cracked an egg into the potato.  Next, I sprinkled garlic flakes on top, and returned to the oven for about 30 minutes at 425.  Honestly though, it could have been more or less, it was one of those I-will-scream-at-everything-all-night nights for Greta.  I am lucky the house did not burn down!  I finally got her calmed down with pancake and scrambled egg.  I am telling you, breakfast, it’s what’s for dinner.

I enjoyed this meal after Greta was in bed at the ripe time of 6:15.  I kept the scooped out potato pieces right on the baking sheet and they turned into what I would describe as garlic baked potato wedges – delicious! 

Happily, spring is popping up all over here.  I have loads of daffodils in the yard now and the birds are getting louder every morning.  Mornings are still chilly with scraping every now and then, but afternoons we go jacket-free.  Why are we going back to Iowa again?

Spring also means Crape Murder is popping up around town.  I just hate the way Crape Myrtle trees look all hacked off.  It just looks painful.

Oh yes, this is why we are heading back to Iowa.  Spring for us also means boxing up and packing.  Greta does her best to be helpful during this arduous process.  She mimics everything these days – even trying to move heavy boxes.

Another favorite activity is cleaning – wiping up her spills here and then spilling more on purpose to repeat the cleaning process all over again.  Tonight I caught her wiping walls, doors, the floor, trim.  Maybe I should get her pint-sized cleaning supplies to help out before the first open house.

Gosh this is gorgeous – gonna have to put Eric to work on figuring out this one.
